Egg Muffins – These easy to make muffins can be frozen and reheated when you don’t have time to cook.

  • 3/4 cup cooked and crumbled Italian sausage, you could also do cubed ham
  • 2 small handfuls of fresh spinach
  • 6 large eggs
  • 1/4 cup milk
  • 1/3 cup shredded cheese
  • Salt and pepper.

Preheat oven to 350 degrees, spray 6 muffin cups with non-stick spray, whisk together the sausage or ham, spinach, eggs and milk. Scoop into the muffin tins and sprinkle cheese on top. Add salt and pepper to taste. Bake for 25-30 minutes or until cooked. Eat what you need now and freeze the rest.

Bacon and Caramelized Onion Grilled Cheese

  • 1-2 Slices of Swiss Cheese
  • 2 Slices of Bacon Cooked
  • 1/4 of an Onion Sliced thin
  • 2 Slices of Whole Wheat Bread

Cook the onion on a griddle or in a hot frying pan with a little butter. Cook the onions till they are very soft and tender, this will help them caramelize.

Add the onions, bacon and cheese and cook the sandwich on the grill like you would any other grilled cheese.

4 Ingredient Summer Salad

  • 4 cups of mixed salad greens
  • 1 cup of strawberries
  • 1 cup of Craisins
  • 1 cup of crumbled feta or goat cheese.

This is a super simple salad that can be quickly thrown together. For a protein boost you can add 1/2 cup of cooked chicken to the mix. Balsamic Vinegar would go great with the fruitiness of this salad or pick up a bottle of salad dressing at the store.
